Green Garlic

Green garlic (young garlic harvested before a bulb forms) has a mild, nutty, and sweet flavor. Treat the whole plant—from the white bulb to the tender green tops—like a cross between a leek, scallion, and mature garlic. Chop it small for raw use, or use larger pieces when cooking for a nice garlic flavor.
